Principle of Good Gming: Interesting NPCs

One aspect of gming I am known for is interesting NPCS. Not too wild but just enough dimension to be entertaining. Think of it this way: Ever actually talked to the Telemarketer that calls your house?

that's how interesting I mean, just enough to make the stranger a little more familiar if the PCs actually get into a dialogue with them. Take for instant a nameless red shirt Imperial Navy guy supporting the PCs.
Why is he on a rogue trader ship:easy Cash.
How old is he : 20.
Did he know what he was getting into : No.
What is his response if he encounters something messed up: Like most normal people is to freak out.
What are his hobbies: He likes to cook and is very particular on creating chocolate covered deserts

Wait a sec.

What was that last part?
Well Its the extra tidbit that sets him apart. that's all.

Sometimes an interesting NPC may be someone really good at something annoying that no one else wants to do. So said above example lets say is in the Jungles of Catacan and the PCs need to find food, maybe he knows how to find and prepare specific foods with out the team getting poisoned and to make it palatable. That now gives a reason why the PCs may want to eep him alive or not just to shoo him at the first sign of cowardice.
